Chicken Breast With Crab Stuffing
Juicy chicken breasts stuffed with crab, herbs, and green peppers, then baked to perfection for a savory, elegant main course suitable for special occasions or family dinners.
Ingredients
- 8 boneless chicken breast halves ⓘ
- 1/4 tsp. salt ⓘ
- 1 egg, beaten ⓘ
- 1 cup herb seasoned stuffing ⓘ
- 1/2 can cream of mushroom soup
- 1 (6 1/2 oz.) can crabmeat, drained ⓘ
- 1/4 cup chopped green peppers
- 1 Tbsp. lemon juice ⓘ
- 2 tsp. Worcestershire sauce ⓘ
- 1 tsp. mustard ⓘ
- 1 cup Rice Krispies cereal, crushed ⓘ
Instructions
- Sprinkle the inside of each chicken breast with salt and flatten by pounding.
- Prepare the filling by mixing the beaten egg, herb-seasoned stuffing, cream of mushroom soup, drained crabmeat, chopped green peppers, lemon juice, Worcestershire sauce, and mustard.
- Place the filling inside each flattened chicken breast and roll up around the stuffing.
- Dip each rolled chicken breast in melted butter, then coat with crushed Rice Krispies cereal.
- Place the seam side down in an ungreased shallow baking dish and sprinkle lightly with garlic powder.
- Bake at 350°F (175°C) for 1 1/2 hours until cooked through and golden.
