Ingredients

  • 3 large chicken breasts, boned, skinned and halved lengthwise
  • 6 slices prosciutto or thinly sliced ham
  • 6 thin slices Swiss cheese
  • 2 Tbsp butter or margarine
  • salt and pepper
  • 1 can cream of mushroom soup
  • 1/4 cup dry white wine
  • 1 can sliced mushrooms, drained

Instructions

  1. Pound chicken breasts with a wooden mallet until about 1/4 inch thick.
  2. Place a slice of ham and Swiss cheese on each chicken breast.
  3. Tuck in the sides and roll up like a jelly roll. Skewer or tie securely.
  4. Sprinkle with salt and pepper.
  5. Brown the chicken rolls in butter in a skillet.
  6. Remove from skillet and place in a shallow baking pan.
  7. Combine cream of mushroom soup, white wine, and sliced mushrooms.
  8. Pour the mushroom mixture over the chicken rolls.
  9. Bake at 350°F for 1 hour.
