Ingredients

  • 1/4 cup all-purpose flour
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 6 (4 oz.) skinless boneless chicken thighs
  • 1 tablespoon olive oil
  • 6 cups quartered crimini or white mushrooms
  • 2 cups sliced carrots
  • 1/3 cup Canadian bacon
  • 1 cup dry red wine
  • 1 cup fat-free less-sodium chicken broth
  • 1 tablespoon tomato paste

Instructions

  1. Combine flour, thyme, and salt in a zip-top bag; add chicken, seal, and shake to coat.
  2. Remove chicken from bag and shake off excess flour mixture.
  3. Heat oil in a large nonstick skillet over medium-high heat.
  4. Add chicken and cook 8 minutes or until browned, turning frequently.
  5. Remove chicken from pan.
  6. Add mushrooms, carrots, and bacon to the pan; sauté 2 minutes.
  7. Stir in wine, broth, and tomato paste; cook for 9 minutes.
  8. Return chicken to the pan; cook for 8 minutes or until chicken is done.
