Ingredients

  • 1/2 package Betty Crocker scalloped potatoes or 1 package Betty Crocker au gratin potatoes
  • 1 1/2 cups thinly sliced carrots
  • 1/3 cup finely chopped onion
  • 3 cups water
  • 2 cups milk
  • 1 teaspoon instant chicken bouillon
  • 1 package frozen chopped broccoli
  • 2 cups cut-up cooked chicken
  • 1 1/2 cups shredded Swiss cheese

Instructions

  1. Mix all ingredients except chicken and cheese in a 3-quart saucepan.
  2. Heat to boiling, stirring frequently.
  3. Reduce heat, cover, and simmer.
  4. Cook until potatoes are tender, about 20 to 25 minutes, stirring occasionally.
  5. Stir in cheese and cooked chicken.
  6. Cover and cook until hot, about 5 minutes longer.
