Ingredients

  • 12 oz. bag fine egg noodles
  • 2 jars chunky spaghetti sauce
  • 4 chicken breasts
  • 8 oz. nonfat ricotta cheese
  • 4 egg whites
  • 8 oz. part skim mozzarella cheese
  • 2 Tbsp. parmesan cheese

Instructions

  1. In a large bowl, combine cooked, boned, and skinned chicken breasts with the chunky spaghetti sauce.
  2. In a separate bowl, mix nonfat ricotta cheese, egg whites, and parmesan cheese.
  3. Spray a 9 x 13 inch pan with nonfat cooking spray.
  4. Spread half of the chicken and spaghetti sauce mixture in the pan.
  5. Top with half of the ricotta cheese mixture.
  6. Place half of the cooked noodles on top of this layer.
  7. Repeat the layers with the remaining chicken mixture, ricotta mixture, and noodles.
  8. Top the casserole with shredded part-skim mozzarella cheese.
  9. Bake at 350°F (175°C) for 30 to 40 minutes until heated through and cheese is bubbly.
