Ingredients

  • 2 large eggs
  • 3/4 cup cottage cheese
  • 1 (5 oz.) can premium chunk white chicken, drained
  • 1 (10 oz.) package frozen chopped broccoli, thawed and squeezed dry
  • 1/4 teaspoon salt
  • 1/4 teaspoon allspice
  • 1/8 teaspoon pepper
  • 6 sheets phyllo dough
  • 3 tablespoons butter or margarine, melted

Instructions

  1. Ensure the phyllo dough has been thawed and is at room temperature.
  2. In a bowl, beat the eggs and mix in cottage cheese, drained chicken, thawed and squeezed dry broccoli, salt, allspice, and pepper.
  3. Preheat oven to 375°F (190°C).
  4. Cut each sheet of phyllo dough in half to create rectangles.
  5. Place a spoonful of filling near one corner of a phyllo rectangle.
  6. Fold the corner over the filling to form a triangle, then continue folding along the edge to enclose the filling completely, creating a triangle shape.
  7. Repeat with remaining sheets and filling.
  8. Brush each triangle with melted butter or margarine.
  9. Place the triangles on a baking sheet lined with parchment paper.
  10. Bake for 15 minutes or until golden brown and crisp.
