Ingredients

  • 9 slices day-old bread, cubed
  • 3 cups chicken broth
  • 4 cups cubed cooked chicken
  • 1/2 cup uncooked instant rice
  • 1/2 cup diced pimento
  • 2 tablespoons minced fresh parsley
  • 1 teaspoon salt
  • 4 eggs, beaten

Instructions

  1. In a large bowl, toss bread cubes with chicken broth.
  2. Add cooked chicken, rice, pimentos, parsley, and salt; mix well.
  3. Pour mixture into a greased 13 x 9-inch baking pan.
  4. Pour beaten eggs over the mixture.
  5. Bake in a 325°F (163°C) oven for 1 hour, uncovered.
  6. Let set a few minutes before cutting into squares or slices.
