Ingredients

  • 1/4 cup butter
  • 1/4 cup flour
  • 3 chicken bouillon cubes, crumbled
  • 2 cups milk
  • 3 cups cooked chicken, cubed (1/2-inch)
  • 1/2 pound fresh mushrooms, sliced
  • 4 cups cooked rice
  • 1 cup shredded sharp Cheddar cheese

Instructions

  1. Melt butter in a 3-quart saucepan.
  2. Blend in flour and crumbled chicken bouillon cubes.
  3. Gradually stir in milk.
  4. Cook over medium heat, stirring constantly until mixture comes to a boil.
  5. Remove from heat.
  6. Stir in cooked chicken and sliced mushrooms.
  7. Arrange cold cooked rice in a greased 8-inch square baking dish.
  8. Spoon chicken and mushroom mixture over the rice.
  9. Sprinkle with shredded sharp Cheddar cheese.
  10. Bake in a 350°F (175°C) oven for 30 minutes or until bubbly.
