A savory chicken dish layered with spinach, mushrooms, Canadian bacon, and melted cheese, baked to perfection with a flavorful wine and cream sauce, ideal for comforting dinners.

Ingredients

  • 1 pkg chopped spinach
  • 1 Tbsp butter
  • 1 Tbsp chopped scallions
  • salt
  • pepper
  • 4 chicken breasts
  • 1/2 cup wine
  • 1/2 cup chicken broth
  • Canadian bacon
  • 1 can mushrooms
  • 1 tsp minced garlic
  • 1 can cream of celery soup
  • grated Swiss cheese

Instructions

  1. Cook chopped spinach according to label instructions, drain, and spread in a warm iron pan.
  2. Saute chopped scallions in butter for 1-2 minutes.
  3. Add chicken breasts, salt, and pepper, then simmer, covered, in wine and chicken broth for 15 to 20 minutes.
  4. Remove the chicken and layer it on top of the spinach in the pan.
  5. Save the liquid from cooking (about 1+ cup). Warm slices of Canadian bacon in the liquid and place on top of the chicken.
  6. Add mushrooms and minced garlic to the wine and broth mixture, then simmer for 3 minutes.
  7. Add cream of celery soup to the mixture and bring to a boil.
  8. Spread the sauce over the chicken and spinach.
  9. Sprinkle grated Swiss or Parmesan cheese and bread crumbs over the top.
  10. Bake until the cheese melts or broil until bubbling and golden.
