Chicken Creole

Ingredients
- 1/4 c. vegetable oil ⓘ
- 1/4 c. all-purpose flour ⓘ
- 1 green pepper, chopped ⓘ
- 1 medium onion, chopped ⓘ
- 2 c. chopped cooked chicken ⓘ
- 1 (28 oz.) can tomatoes, stewed ⓘ
- 2 Tbsp. Worcestershire sauce ⓘ
- 2 or 3 cloves garlic, minced ⓘ
- 1 tsp. soy sauce ⓘ
- 1 tsp. sugar ⓘ
- 1/2 tsp. pepper ⓘ
- 1/4 tsp. salt ⓘ
- 3 dashes hot sauce ⓘ
- hot cooked rice ⓘ
Instructions
- Heat vegetable oil in a heavy skillet until hot.
- Stir in 1/4 cup flour.
- Stir constantly until mixture is about the color of a copper penny, about 5 minutes.
- Reduce heat.
- Add pepper and onion; cook until tender, about 10 minutes, stirring constantly.
- Add chicken, tomatoes, Worcestershire sauce, garlic, soy sauce, sugar, pepper, salt, and hot sauce.
- Cover and simmer for about 20 minutes.
- Serve over rice.
