Ingredients

  • 1/4 c. vegetable oil
  • 1/4 c. all-purpose flour
  • 1 green pepper, chopped
  • 1 medium onion, chopped
  • 2 c. chopped cooked chicken
  • 1 (28 oz.) can tomatoes, stewed
  • 2 Tbsp. Worcestershire sauce
  • 2 or 3 cloves garlic, minced
  • 1 tsp. soy sauce
  • 1 tsp. sugar
  • 1/2 tsp. pepper
  • 1/4 tsp. salt
  • 3 dashes hot sauce
  • hot cooked rice

Instructions

  1. Heat vegetable oil in a heavy skillet until hot.
  2. Stir in 1/4 cup flour.
  3. Stir constantly until mixture is about the color of a copper penny, about 5 minutes.
  4. Reduce heat.
  5. Add pepper and onion; cook until tender, about 10 minutes, stirring constantly.
  6. Add chicken, tomatoes, Worcestershire sauce, garlic, soy sauce, sugar, pepper, salt, and hot sauce.
  7. Cover and simmer for about 20 minutes.
  8. Serve over rice.
