Chicken Enchiladas Casserole

Ingredients

  • 4 cups pre-cooked chicken
  • 1/4 cup butter
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 cup sour cream
  • 1 package flour tortillas
  • 1 can chicken broth
  • 1 can chopped black olives
  • 1 small can sliced green chiles
  • 1/2 cup chopped onion
  • 1 1/2 pounds grated cheddar cheese

Instructions

  1. Saute chopped onions in butter until translucent.
  2. Add chicken broth and bring to a simmer.
  3. Stir in two cans of cream of chicken and mushroom soups, chopped green chiles, chopped black olives, and pre-cooked chicken. Simmer for 7 minutes.
  4. Add 1/4 cup grated cheddar cheese and sour cream to the mixture, stirring until combined.
  5. Layer tortillas and chicken mixture in a 9 x 13 inch pan, starting with a tortilla, then chicken mixture, then cheese, repeating until ingredients are used, ending with a layer of cheese on top.
  6. Sprinkle 1 cup grated cheddar cheese over the top layer.
  7. Bake at 350°F (175°C) covered for 25 minutes, then remove cover and bake for an additional 5 minutes to brown the cheese.
