Ingredients

  • 3 lb chicken
  • 24 oysters or shrimp
  • 3 sprigs parsley
  • 2 qt hot water
  • cayenne pepper
  • 2 Tbsp cooking oil
  • 2 Tbsp flour
  • 1/2 onion
  • 2 Tbsp file
  • salt

Instructions

  1. Cut the chicken into pieces, wash, and wipe dry.
  2. Season the chicken well with salt and black pepper.
  3. Brown the chicken in hot cooking oil in a large pot.
  4. Remove the chicken from the pot.
  5. Sift flour into the hot oil and cook until browned to make a roux.
  6. Add minced onion and cook for 2 minutes.
  7. Return the chicken to the pot and add hot water and a few grains of cayenne pepper.
  8. Simmer until the chicken is tender, about 30 minutes.
  9. Add oysters or shrimp and minced parsley.
  10. Simmer for an additional 20 minutes.
  11. Remove from heat and serve with steamed rice.
