Ingredients

  • 2 lb. chicken breast
  • 2 Tbsp. flour
  • 1 tsp. parsley
  • 1/4 pt. sherry wine
  • 1 lemon
  • 1/2 stick margarine
  • pepper
  • salt
  • 1/2 c. oil
  • 2 eggs
  • mushrooms

Instructions

  1. Slice the chicken breasts.
  2. Dredge the chicken slices in flour, then dip into beaten eggs.
  3. Heat oil in a frying pan and fry the coated chicken until golden brown.
  4. Drain excess oil from the fried chicken.
  5. In the same pan, add lemon juice, margarine, sherry wine, parsley, pepper, and salt.
  6. Add mushrooms to the pan and simmer for 10 minutes before serving.
