Ingredients

  • 1 pkg. chicken parts
  • 1 cup diced green pepper
  • 1 cup diced celery
  • 1/2 cup onion
  • 3 to 4 dashes seasoned salt
  • 3 cups flour
  • 1/2 stick butter

Instructions

  1. Dredge the chicken parts in flour until coated.
  2. Place the floured chicken in a roasting pan.
  3. Top the chicken with diced celery, onion, and green pepper.
  4. Add a little water to the bottom of the pan and place slices of butter on top of the chicken.
  5. Bake in the oven for 1 hour.

Tips & Substitutions

For added flavor, marinate the chicken in your favorite spices or buttermilk for a few hours before dredging. You can substitute the chicken parts with boneless chicken breasts for a leaner option. If you're looking for a gluten-free alternative, consider using almond flour or a gluten-free all-purpose blend in place of regular flour.

Serving Suggestions

Serve the Chicken Frickey with a side of fluffy rice or mashed potatoes to absorb the flavorful juices. A fresh green salad or steamed vegetables can balance the richness of the dish. It pairs beautifully with Sausage Cornbread Dressing for a hearty meal.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, place the chicken in a preheated oven at 350°F until warmed through, about 20 minutes. This will help maintain the chicken's moisture and crispness.

Frequently Asked Questions

Can I use skinless chicken for this recipe?

Yes, you can use skinless chicken parts; however, keep in mind that the skin helps retain moisture and adds flavor. You may want to adjust cooking time slightly to ensure the chicken remains juicy.

What can I use instead of butter?

If you prefer a dairy-free option, you can use olive oil or coconut oil as a substitute for butter. This will still provide a nice richness to the dish while accommodating dietary preferences.

Can I add other vegetables to this dish?

Absolutely! Feel free to add carrots, zucchini, or even tomatoes for extra flavor and nutrition. Just chop them into similar sizes to ensure even cooking.
