  • 4 chicken breasts
  • 1 c. sherry cooking wine
  • 2 large green peppers
  • 1 stalk celery
  • cooked rice
  • 4 tsp. butter
  • 1 c. chicken broth
  • 1 large onion
  • 3 tomatoes

Instructions

  1. Cut the green peppers and onion into eighths and the celery into 1-inch pieces.
  2. Quarter the tomatoes.
  3. Quickly brown the chicken breasts in butter in a skillet.
  4. Drain excess butter from the skillet and add sherry cooking wine and chicken broth; cover and simmer the chicken for 45 minutes.
  5. Add the prepared vegetables and cook for an additional 10 to 15 minutes.
  6. Serve the chicken and vegetables over a bed of cooked rice.
