Chicken In Chablis

Ingredients

  • 2 lb chicken breasts
  • 1 Tbsp butter
  • 1/4 lb mushrooms
  • 1 tsp cornstarch
  • salt
  • nutmeg
  • 2 Tbsp minced onion
  • 2/3 c Chablis

Instructions

  1. Bone and skin the chicken breasts, then sprinkle them with salt and nutmeg on both sides.
  2. Brown the chicken in butter in a skillet.
  3. Add minced onion and quartered mushrooms to the skillet.
  4. Pour in 2/3 cup of Chablis and bring to a boil.
  5. Cover and reduce heat, then simmer for 15 minutes.
  6. Remove the chicken to a warm platter.
  7. Increase the heat to bring the pan juices to a boil.
  8. Cook, stirring until the liquid is slightly reduced.
  9. Mix cornstarch with 2 teaspoons of Chablis, then stir into the pan.
  10. Cook and stir until the sauce thickens.
  11. Spoon the sauce over the chicken and serve.
