Ingredients

  • 2 Tbsp. oil
  • 1 fryer (2½ to 3 lb.), cut into serving pieces
  • flour
  • ½ lb. fresh mushrooms, cut into pieces
  • 6 oz. jar marinated artichoke hearts, drained
  • 2 cloves garlic, minced
  • ½ tsp. oregano
  • ½ tsp. ground pepper
  • 2 c. fresh tomatoes

Instructions

  1. Heat oil in a frying pan.
  2. Dredge chicken pieces in flour and lightly brown in oil.
  3. Place the browned chicken in a casserole dish with mushrooms and artichoke hearts.
  4. Stir in minced garlic, oregano, ground pepper, and chopped fresh tomatoes, then pour over the chicken mixture.
  5. Bake at 350°F for 1 to 1½ hours until the chicken is tender, adding sherry during the last few minutes of cooking.
