Ingredients

  • 12 skinless, boneless chicken breasts
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 1 cup chopped onions
  • 1 cup chopped celery
  • 2/3 cup butter
  • 1 1/4 cup dry white wine
  • 2 (7 1/2 oz.) cans crab meat, drained and flaked
  • 1 cup dry herb-seasoned stuffing mix
  • 1/4 cup flour
  • 1 teaspoon paprika

Instructions

  1. Pound the chicken breasts to flatten them.
  2. Sprinkle with salt and ground pepper.
  3. Cook the chopped onions and celery in 1/2 cup of butter until transparent.
  4. Remove from heat and add 6 tablespoons of white wine, the drained crab meat, and the stuffing mix; mix well.
  5. Divide the crab mixture among the chicken breasts, placing it in the center of each piece.
  6. Roll up each breast and secure with toothpicks.
  7. Combine flour and paprika; roll each chicken roll in the mixture to coat.
  8. Divide the coated chicken breasts between two 11 x 7-inch casseroles.
  9. Drizzle the remaining butter over the chicken.
  10. Bake in a 375°F oven for 1 hour.
