Ingredients

  • 2 Tbsp. margarine
  • 2 Tbsp. flour
  • 1/4 tsp. paprika
  • 1 1/4 c. milk or light cream
  • 1 c. shredded Cheddar cheese
  • grated peel and juice of 1/2 lemon
  • 10 oz. frozen spinach, chopped, cooked and well drained
  • 2 Tbsp. finely sliced green onion
  • 6 flounder fillets

Instructions

  1. Melt butter in a pan; stir in flour, salt, pepper, and paprika to make a roux.
  2. Gradually add milk, stirring constantly until the sauce thickens.
  3. Add 1/2 cup of shredded Cheddar cheese, lemon peel, and lemon juice; stir until the cheese melts and the sauce is smooth.
  4. Cook and drain the chopped frozen spinach thoroughly.
  5. Place a spoonful of spinach and some shredded cheese mixture on each flounder fillet.
  6. Roll up the fillets to enclose the filling.
  7. Serve the fish roll-ups with the cheese sauce spooned over the top.
