Chicken Linguine

Ingredients

  • 1 lb. sliced fresh mushrooms
  • 1/2 cup dry sherry
  • 2 Tbsp. reduced calorie margarine, melted and divided
  • 4 (4 oz.) skinned, boned chicken breast halves
  • vegetable cooking spray
  • 1/2 cup chopped onion
  • 1/4 cup plus 2 Tbsp. all-purpose flour
  • 3 cups canned no salt added chicken broth, undiluted and divided
  • 1 (8 oz.) carton nonfat sour cream alternative
  • 16 oz. pkg. linguine, uncooked
  • 1/2 cup (2 cup) shredded reduced fat Monterey Jack cheese
  • 1/4 cup plus 2 Tbsp. freshly grated Parmesan cheese, divided

Instructions

  1. Saute mushrooms in sherry and 1 tablespoon margarine in a nonstick skillet over high heat for 5 minutes.
  2. Place chicken breasts in a saucepan, add water to cover, bring to a boil, then cover, reduce heat, and simmer for 20 minutes.
  3. Drain the chicken, let cool, and shred.
  4. Coat a saucepan with cooking spray and heat over medium. Add chopped onion and saute until tender.
  5. Combine flour and 1/2 cup chicken broth. Add 2 1/2 cups chicken broth and flour mixture to the onion, cook until thickened, then remove from heat.
  6. Stir in nonfat sour cream alternative.
  7. Cook linguine according to package directions, omitting salt and fat. Drain.
  8. Combine mushroom mixture, shredded chicken, sour cream mixture, Monterey Jack cheese, 1/4 cup Parmesan cheese, and pepper.
  9. Stir in cooked linguine.
  10. Spoon the mixture into a 13 x 9 x 2-inch baking dish coated with cooking spray.
  11. Combine bread crumbs, remaining Parmesan cheese, and margarine to make topping.
  12. Sprinkle the topping over the chicken mixture.
  13. Bake uncovered at 350°F (175°C) for 30 minutes.
