Chicken Luau

Ingredients

  • 1 red or yellow bell pepper, long strips
  • 4 to 6 chicken breasts, skinless and sliced in long pieces
  • 1 grated large carrot
  • 1/2 cup diced celery
  • 1 can pineapple chunks
  • 1/2 bunch green onions, chopped
  • 1/2 cup almond slivers
  • 1/2 package crushed Ramen noodles
  • 1/2 carton sliced mushrooms
  • 3 to 4 garlic cloves

Instructions

  1. Dip chicken slices in a 50-50 mixture of flour and cornmeal.
  2. Heat 3 tablespoons of liquid oil in a wok or large saucepan.
  3. Saute chicken in mashed garlic cloves until golden brown.
  4. Drain the chicken, but leave oil and breading mixture in the wok.
  5. Increase heat and add 2 to 3 tablespoons oil to accommodate prepared vegetables.
  6. Stir-fry vegetables until somewhat softened.
  7. Add half a package of crushed Ramen noodles and the seasoning pack.
  8. Pour pineapple juice into the frying vegetables.
  9. Add the cooked chicken and continue cooking until vegetables are done but still a bit crunchy.
  10. For added heat, include hot chopped peppers, chiles, or cayenne.
  11. Serve over yellow saffron rice.
