Chicken Majorca
A flavorful chicken dish with a rich sherry-based sauce, complemented by citrus and herbs, perfect for elegant dinners or special occasions.
Ingredients
- 3 to 4 lb. chicken ⓘ
- 3 Tbsp. bacon fat ⓘ
- 2 Tbsp. sherry ⓘ
- 1 tsp. tomato paste ⓘ
- 1/2 tsp. Gravy Master or Kitchen Bouquet ⓘ
- 3 tsp. flour ⓘ
- 1 1/2 cups light chicken stock ⓘ
- 1 sprig tarragon
- 1 sprig parsley ⓘ
- 2 tsp. olive oil ⓘ
- 1 tsp. chopped garlic ⓘ
- 3 slices mushrooms
- 1/2 diced red pepper ⓘ
- 1/2 diced green pepper ⓘ
- 2 skinned, seeded tomatoes ⓘ
- Grated rind of 1 orange ⓘ
Instructions
- Cut the chicken as for a casserole.
- Brown the chicken in bacon fat; add the sherry and cook briefly.
- Remove the chicken and set aside.
- In the same pan, add tomato paste, Gravy Master, flour, and chicken stock.
- Stir until the mixture boils.
- Return the chicken to the pan along with tarragon, parsley, salt, and pepper.
- Cover and cook slowly for 35 minutes.
