Ingredients

  • 1 medium onion, chopped
  • 1 Tbsp. margarine, melted
  • 1/4 cup flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 1/4 cups milk, divided
  • 1 pound diced cooked chicken breast
  • 1 (16 oz.) can peas and carrots, drained
  • 1 teaspoon sage
  • 1 teaspoon thyme
  • 2 cups quick biscuit mix
  • 1 Tbsp. chopped fresh parsley

Instructions

  1. In a medium saucepan, sauté chopped onion and melted margarine.
  2. Stir in flour, salt, and pepper.
  3. Whisk in 2 1/2 cups of milk.
  4. Cook until slightly thickened.
  5. Add diced cooked chicken, drained peas and carrots, sage, and thyme.
  6. Divide the mixture into 4 (8-ounce) baking dishes.
  7. Preheat oven to 450°F.
  8. In a medium bowl, combine remaining 3/4 cup milk, biscuit mix, and chopped parsley.
  9. Drop 4 or 5 teaspoons of biscuit mixture on each baking dish.
  10. Bake about 15 minutes until bubbly and biscuits are browned.
