Ingredients
- 1 medium onion, chopped ⓘ
- 1 Tbsp. margarine, melted ⓘ
- 1/4 cup flour ⓘ
- 1/4 teaspoon salt ⓘ
- 1/4 teaspoon pepper ⓘ
- 3 1/4 cups milk, divided ⓘ
- 1 pound diced cooked chicken breast ⓘ
- 1 (16 oz.) can peas and carrots, drained ⓘ
- 1 teaspoon sage ⓘ
- 1 teaspoon thyme ⓘ
- 2 cups quick biscuit mix ⓘ
- 1 Tbsp. chopped fresh parsley ⓘ
Instructions
- In a medium saucepan, sauté chopped onion and melted margarine.
- Stir in flour, salt, and pepper.
- Whisk in 2 1/2 cups of milk.
- Cook until slightly thickened.
- Add diced cooked chicken, drained peas and carrots, sage, and thyme.
- Divide the mixture into 4 (8-ounce) baking dishes.
- Preheat oven to 450°F.
- In a medium bowl, combine remaining 3/4 cup milk, biscuit mix, and chopped parsley.
- Drop 4 or 5 teaspoons of biscuit mixture on each baking dish.
- Bake about 15 minutes until bubbly and biscuits are browned.
