A hearty baked chicken and vegetable casserole featuring tender chicken breasts, potatoes, peas, and carrots in a creamy mushroom sauce, perfect for comforting family dinners.

Ingredients

  • 4 chicken breasts, skin removed
  • 3 cups sliced potatoes
  • 1 onion, sliced
  • 1/4 cup water
  • 1 can cream of mushroom soup
  • 1 package frozen English peas and carrots
  • 4 tablespoons margarine
  • salt and pepper

Instructions

  1. Place the chicken breasts in a casserole dish.
  2. Butter the top of the chicken breasts.
  3. Spread sliced potatoes over the chicken.
  4. Add sliced onions on top of the potatoes.
  5. Arrange frozen English peas and carrots over the onions.
  6. Pour cream of mushroom soup evenly over the vegetables.
  7. Dot the top with margarine.
  8. Add water, then season with salt and pepper.
  9. Cover the casserole and bake at 400°F (200°C) for 2 hours.
