Ingredients

  • 1 tsp. olive oil
  • 1 c. chopped onion
  • 1/2 green pepper, chopped
  • 1 clove garlic, minced
  • 1 (14 oz.) can Italian style diced tomatoes
  • 1/4 lb. chicken breast, cubed
  • 2 Tbsp. dry red wine
  • 1 c. penne (uncooked)
  • 2 Tbsp. grated Parmesan cheese

Instructions

  1. Cook the penne pasta according to the package directions.
  2. Add the olive oil, chopped onion, chopped green pepper, and minced garlic to a frying pan.
  3. Simmer for 30 to 45 minutes until the chicken is cooked through.
  4. Drain the noodles and in a bowl, mix with the tomato mixture.
  5. Sprinkle with grated Parmesan cheese and serve.
