Ingredients

  • 3 lb. chicken breast
  • 4 cups chicken broth
  • 1 cup cream of celery soup, undiluted
  • 2 hard-cooked eggs
  • 1/4 cup margarine or butter
  • 1 cup self-rising flour
  • 1 cup milk
  • dash of pepper

Instructions

  1. Cook chicken breast with celery and onion, along with salt and pepper; cool and cut into bite-sized pieces.
  2. Mix cooked chicken with undiluted cream of celery soup and chicken broth.
  3. Heat the mixture to boiling.
  4. Grease a 2-quart casserole dish, put the chicken mixture in, and sprinkle with chopped hard-cooked eggs.
  5. Pour the broth over the chicken mixture.
  6. Make a batter by mixing margarine or butter, self-rising flour, pepper, and milk.
  7. Pour the batter over the chicken mixture without stirring.
  8. Bake in a 425°F oven for 30 minutes until golden and bubbly.
