Ingredients

  • 1 Tbsp. olive oil
  • 2 Tbsp. onion, finely chopped
  • 1 c. mushrooms, thickly sliced
  • 1 small clove garlic, minced
  • 1/2 tsp. oregano
  • 1 (8 oz.) can tomato sauce
  • pepper to taste
  • 8 chicken breast halves, boneless and skins removed
  • 1 c. sliced Mozzarella cheese

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a small saucepan, heat olive oil over low heat.
  3. Add chopped onion, sliced mushrooms, minced garlic, and oregano; cook, stirring occasionally, until the onion is soft.
  4. Stir in tomato sauce and pepper; simmer briefly.
  5. Place chicken breasts in a 2-quart baking dish and cover with the sauce.
  6. Bake, uncovered, for 35 minutes.
  7. Remove from oven, sprinkle sliced mozzarella cheese on top, and continue baking for 5 more minutes or until the cheese is bubbling.
