Moe'S Rice
A hearty Italian-inspired rice dish with sausage, vibrant vegetables, and aromatic spices, perfect for comforting family dinners or casual gatherings with rich flavors.

- Set the oven to 400°F (200°C).
- Remove casing from sausage, slice into two pieces, and bake until done.
- Remove all grease from sausage with paper towels and slice into tiny pieces.
- Slice carrots and chop peppers.
- Blanch carrots, peppers, and peas separately in 4 tablespoons of water in the microwave.
- In a large skillet, sauté onions in butter until they start to brown.
- Add one pint of chicken broth and let simmer.
- Stir in rice and when it begins to boil, add the second pint of broth and water as needed.
- Add minced garlic and salt, if desired.
- Stir in curry powder and orange juice.
- Add peppers and carrots to the skillet.
- Let simmer for 12 minutes, then add peas.
- Add the cooked sausage pieces to the skillet.
- Stir constantly and add additional water if necessary.
- Serve topped with chopped olives and sliced green onions.
