A hearty Italian-inspired rice dish with sausage, vibrant vegetables, and aromatic spices, perfect for comforting family dinners or casual gatherings with rich flavors.

Ingredients

  • 1 lb wide grain enriched rice
  • 4 Tbsp butter
  • 2 medium onions
  • salt
  • 2 pt chicken broth
  • 1 pt water
  • 4 garlic cloves
  • 4 carrots
  • 1 bag frozen peas
  • 1 yellow pepper
  • 1 red pepper
  • 1/3 lb Italian Jonesville sausage
  • curry powder
  • 1/4 cup orange juice

Instructions

  1. Set the oven to 400°F (200°C).
  2. Remove casing from sausage, slice into two pieces, and bake until done.
  3. Remove all grease from sausage with paper towels and slice into tiny pieces.
  4. Slice carrots and chop peppers.
  5. Blanch carrots, peppers, and peas separately in 4 tablespoons of water in the microwave.
  6. In a large skillet, sauté onions in butter until they start to brown.
  7. Add one pint of chicken broth and let simmer.
  8. Stir in rice and when it begins to boil, add the second pint of broth and water as needed.
  9. Add minced garlic and salt, if desired.
  10. Stir in curry powder and orange juice.
  11. Add peppers and carrots to the skillet.
  12. Let simmer for 12 minutes, then add peas.
  13. Add the cooked sausage pieces to the skillet.
  14. Stir constantly and add additional water if necessary.
  15. Serve topped with chopped olives and sliced green onions.
