Chicken Provolone

Ingredients

  • 1 pkg. boneless chicken breasts
  • 1/2 cup flour
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon tarragon leaves
  • 1/4 cup butter
  • 1/4 cup white wine
  • 1/2 pound fresh mushrooms
  • 5 slices Provolone cheese

Instructions

  1. Between 2 pieces of Saran Wrap, pound chicken to 1/4-inch thickness.
  2. In a small bowl, mix flour, salt, pepper, and tarragon. Dredge chicken in the mixture to coat.
  3. In a large skillet, melt butter over medium heat. Add chicken and sauté, turning once, until fork-tender.
  4. Add white wine to the skillet and turn to coat the chicken.
  5. Remove chicken to a shallow pan and keep warm.
  6. Add mushrooms to the same skillet and sauté for 3 minutes.
  7. Add 1/2 teaspoon salt and 1/8 teaspoon pepper to the mushrooms.
  8. Top each chicken piece with 2 tablespoons of mushrooms and sauce, then place a slice of Provolone cheese on top.
  9. Broil the assembled chicken 8 inches from the heat until the cheese melts.
