Chicken Provolone
Tender chicken breasts topped with sautéed mushrooms and melted Provolone cheese, offering rich flavors perfect for a comforting yet elegant meal.

- Between 2 pieces of Saran Wrap, pound chicken to 1/4-inch thickness.
- In a small bowl, mix flour, salt, pepper, and tarragon. Dredge chicken in the mixture to coat.
- In a large skillet, melt butter over medium heat. Add chicken and sauté, turning once, until fork-tender.
- Add white wine to the skillet and turn to coat the chicken.
- Remove chicken to a shallow pan and keep warm.
- Add mushrooms to the same skillet and sauté for 3 minutes.
- Add 1/2 teaspoon salt and 1/8 teaspoon pepper to the mushrooms.
- Top each chicken piece with 2 tablespoons of mushrooms and sauce, then place a slice of Provolone cheese on top.
- Broil the assembled chicken 8 inches from the heat until the cheese melts.
