Ingredients

  • yogurt
  • 2 cups uncooked rice
  • oil for frying
  • peppercorns
  • cinnamon stick
  • 2 garlic cloves
  • turmeric powder
  • 1 frying chicken (2 to 3 lb.)
  • whole cloves
  • cardamom seed
  • 2 medium onions
  • 1-inch ginger root
  • ground coriander

Instructions

  1. Place about 3 tablespoons of oil into a large frying pan with 5 or 6 whole cloves, 3 or 4 peppercorns, 4 or 5 whole cardamom seeds that have been popped open or 1/8 teaspoon ground cardamom, 2 or 3 pieces of whole cinnamon sticks, 3 sliced medium onions, 2 garlic cloves and 1-inch fresh ginger root, cut up finely.
  2. Fry for 2 to 3 minutes to bring out the flavor, then add cut-up chicken pieces and fry for another 5 to 6 minutes.
  3. Add 1 teaspoon turmeric powder, 1 teaspoon ground coriander, cleaned and washed rice, and enough liquid to make 4 cups.
  4. Put on a tight lid and cook until the rice is almost finished.
  5. Add 6 tablespoons yogurt and mix thoroughly.
  6. Continue cooking until the liquid is absorbed and rice is tender. Add liquid if necessary.
  7. Serve on a platter and garnish with fried onions (crisp), almonds, raisins, and coconut slices.

Tips & Substitutions

For added flavor, marinate the chicken in yogurt and spices for a few hours before cooking. If you don’t have whole spices, you can use ground versions, but adjust quantities accordingly. Consider adding vegetables like peas or carrots for extra nutrition and color, similar to variations seen in other Indian recipes.

Serving Suggestions

Serve the Chicken Pulao on a large platter, garnished with crispy fried onions, nuts, and dried fruits for a festive touch. It pairs beautifully with a side of yogurt raita or a salad to balance the flavors. For a complete meal, consider serving it alongside Dahi Murgh (An Indian Dish)(Chicken And Yogurt Curry).

Storage & Reheating

Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, add a splash of water to the rice to prevent it from drying out, cover, and warm in the microwave or on the stovetop over low heat until heated through.

Frequently Asked Questions

Can I use brown rice instead of white rice?

Yes, but keep in mind that brown rice takes longer to cook. You may need to adjust the liquid and cooking time accordingly, as brown rice typically requires more water and a longer cooking period.

What can I substitute for yogurt?

If you don't have yogurt, you can use sour cream or a plant-based yogurt as a substitute. These alternatives will still provide creaminess and a slight tang to the dish, maintaining the overall flavor profile.

How can I make this dish spicier?

To increase the heat, consider adding green chilies or red chili powder when cooking the spices. Adjust according to your spice tolerance, as this can significantly change the flavor of the Chicken Pulao.
