Ingredients

  • 1 cup uncooked rice
  • 1/4 cup pimento
  • 1/4 cup green pepper
  • 1/4 cup red pepper
  • 1/2 pound sliced mushrooms
  • 3 cups diced chicken
  • 1/2 cup slivered almonds
  • 2 cups chicken broth
  • 1 1/2 tablespoons flour
  • bread crumbs

Instructions

  1. Layer cooked rice, diced chicken, pimento, green pepper, red pepper, and sliced mushrooms in a baking dish, ending with a layer of rice.
  2. Brown bread crumbs in butter and sprinkle over the top of the layered casserole.
  3. Thicken chicken broth with flour and pour the mixture evenly over the casserole.
  4. Bake at 350°F for 45 minutes until heated through and topping is golden brown.
