- Combine crushed candied ginger, ground almonds, minced shallots, curry powder, salt, pepper, lemon juice, softened butter, cream cheese, and chopped cooked chicken in a bowl.
- Toast 3/4 cup sesame seeds in a heavy skillet over medium heat for about 3 minutes or until golden, then add 1 tablespoon sugar and toast for another minute. Cool the mixture.
- Shape the chicken mixture into 4 equal rolls.
- Cut wax paper into squares, spread 2 tablespoons of toasted sesame seeds on each, and roll each chicken roll in the seeds to coat.
- Bring the coated chicken rolls to room temperature before serving with sesame crackers.
