Ingredients

  • 12 oz. cooked chicken breast, chopped very fine
  • 1/2 cup chopped candied ginger, crushed
  • 1/2 cup ground almonds
  • 2 fresh shallots, minced
  • 2 teaspoons curry powder
  • salt
  • pepper
  • 2 teaspoons lemon juice
  • 4 tablespoons softened butter

Instructions

  1. Combine crushed candied ginger, ground almonds, minced shallots, curry powder, salt, pepper, lemon juice, softened butter, cream cheese, and chopped cooked chicken in a bowl.
  2. Toast 3/4 cup sesame seeds in a heavy skillet over medium heat for about 3 minutes or until golden, then add 1 tablespoon sugar and toast for another minute. Cool the mixture.
  3. Shape the chicken mixture into 4 equal rolls.
  4. Cut wax paper into squares, spread 2 tablespoons of toasted sesame seeds on each, and roll each chicken roll in the seeds to coat.
  5. Bring the coated chicken rolls to room temperature before serving with sesame crackers.
