Ingredients

  • 8 oz. cream cheese
  • 2 Tbsp. lemon juice
  • 1/2 cup mayonnaise
  • 1/2 tsp. salt
  • 1/4 tsp. ground ginger
  • 1/8 tsp. black pepper
  • 2 cups finely chopped chicken breasts
  • 2 boiled eggs, finely chopped
  • 1/4 cup finely chopped onion
  • chopped pecans

Instructions

  1. Mix cream cheese, lemon juice, mayonnaise, salt, ground ginger, and black pepper together using an electric mixer.
  2. Stir in the chopped chicken, boiled eggs, and onion until well combined.
  3. Mix well and chill the mixture in the refrigerator.
  4. Shape the chilled mixture into a ball shape.
  5. Roll the chicken salad ball in chopped pecans to coat the outside.
  6. Refrigerate until ready to serve.
