Ingredients

  • 4 boneless chicken breasts
  • 2/3 cup buttermilk pancake mix
  • 2/3 cup flaked coconut
  • 1/2 teaspoon paprika
  • 1/2 cup sweetened condensed milk
  • 2 tablespoons Dijon mustard
  • 1/4 cup melted margarine

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Mix the buttermilk pancake mix, flaked coconut, and paprika together; set aside.
  3. Combine the sweetened condensed milk and Dijon mustard in a separate bowl.
  4. Dip each chicken breast into the milk mixture, then coat thoroughly in the coconut mixture.
  5. Place the coated chicken breasts in an ungreased 9 x 12-inch baking pan.
  6. Bake in the preheated oven for 35 to 40 minutes, until tender and cooked through.
  7. Drizzle the melted margarine over the baked chicken before serving.
