Ingredients

  • 32 Ronzoni jumbo shells
  • 1/2 cup plain yogurt
  • 1/3 cup mayonnaise
  • 2 tablespoons lemon juice
  • 1 tablespoon curry powder
  • 1 teaspoon prepared mustard
  • 2 garlic cloves
  • 2 cups cooked chicken in strips
  • 1 1/2 cups red pepper chopped
  • 1 cup celery chopped
  • 1/2 cup sliced scallions

Instructions

  1. Cook the pasta shells as directed; drain and set aside.
  2. Combine curry powder, plain yogurt, mayonnaise, lemon juice, prepared mustard, and pressed garlic in a bowl to make the filling.
  3. Add cooked chicken strips, chopped red pepper, chopped celery, sliced scallions, and sunflower seeds to the mixture.
  4. Toss lightly to combine all ingredients.
  5. Spoon approximately 1 1/2 tablespoons of the filling into each cooked shell.
  6. Chill the stuffed shells in the refrigerator before serving.
  7. Serve on a bed of lettuce.
