Chicken Saltimbocca

Chicken Saltimbocca is a delightful Italian dish that combines tender chicken breasts with layers of savory ham, melted Swiss cheese, and fresh tomatoes. Ingredients

  • 3 whole large chicken breasts
  • 6 thin slices boiled ham
  • 6 slices processed Swiss cheese
  • 1 medium tomato
  • crushed dried sage
  • 1/3 c fine dry bread crumbs
  • 2 Tbsp grated Parmesan cheese
  • 2 Tbsp snipped parsley
  • 1/4 c butter

Instructions

  1. Place chicken, boned side up, between two pieces of clear plastic wrap.
  2. Working out from the center, pound each lightly with a meat mallet to 5 1/2 x 5 1/2 inches.
  3. Remove the plastic wrap.
  4. Place a slice of ham and a slice of cheese on each cutlet, cutting to fit within 1/4 inch of the edges.
  5. Top with some chopped tomato; sprinkle lightly with sage.
  6. Fold in the sides; roll up jelly roll fashion, pressing to seal well.
  7. Combine bread crumbs, Parmesan cheese, and parsley.
  8. Dip chicken in melted butter, then roll in the crumb mixture.
  9. Bake in a shallow baking pan at 350° for 40 to 45 minutes.
  10. Remove to a platter.
  11. Blend the mixture remaining in the pan until smooth; serve over chicken.
