Ingredients

  • 3 lb. fryer chicken, cut up
  • 1/4 cup butter or margarine
  • 1 lb. sliced mushrooms
  • 1/2 cup bourbon
  • 1 can chicken stock (10 1/2 oz.)
  • 2 tablespoons tomato paste
  • 1/4 teaspoon Worcestershire sauce
  • 2 tablespoons flour
  • 1 tablespoon melted butter
  • 4 oz. can pimento, drained and cut into strips

Instructions

  1. Salt, pepper, and brown chicken in 1/4 cup butter.
  2. Remove chicken from skillet and set aside.
  3. Add sliced mushrooms to remaining fat in skillet and cook for 2 to 3 minutes, stirring occasionally.
  4. Return chicken to skillet, add bourbon, chicken broth, tomato paste, and Worcestershire sauce.
  5. Cover and bring to a boil.
  6. Reduce heat and simmer for 20 minutes or until chicken is tender.
  7. Transfer chicken to a serving dish.
  8. Blend flour and 1 tablespoon melted butter until smooth.
  9. Add the flour mixture to the sauce and cook, stirring until thickened.
  10. Stir in drained pimento strips.
  11. Pour the sauce over the chicken and serve.
