Chicken Saute Gabelou
Juicy chicken pieces simmered in a rich mushroom and bourbon sauce, accented with pimento strips, perfect for comforting family dinners or special gatherings.
Ingredients
- 3 lb. fryer chicken, cut up ⓘ
- 1/4 cup butter or margarine ⓘ
- 1 lb. sliced mushrooms ⓘ
- 1/2 cup bourbon ⓘ
- 1 can chicken stock (10 1/2 oz.) ⓘ
- 2 tablespoons tomato paste
- 1/4 teaspoon Worcestershire sauce ⓘ
- 2 tablespoons flour ⓘ
- 1 tablespoon melted butter ⓘ
- 4 oz. can pimento, drained and cut into strips ⓘ
Instructions
- Salt, pepper, and brown chicken in 1/4 cup butter.
- Remove chicken from skillet and set aside.
- Add sliced mushrooms to remaining fat in skillet and cook for 2 to 3 minutes, stirring occasionally.
- Return chicken to skillet, add bourbon, chicken broth, tomato paste, and Worcestershire sauce.
- Cover and bring to a boil.
- Reduce heat and simmer for 20 minutes or until chicken is tender.
- Transfer chicken to a serving dish.
- Blend flour and 1 tablespoon melted butter until smooth.
- Add the flour mixture to the sauce and cook, stirring until thickened.
- Stir in drained pimento strips.
- Pour the sauce over the chicken and serve.
