Ingredients

  • 10 oz. can chicken broth, undiluted

Instructions

  1. In a small saucepan, bring the chicken broth to a boil and cook until reduced to 1 cup, about 5 minutes. Set aside.
  2. Combine flour, black pepper, and salt. Sprinkle over both sides of the chicken breasts.
  3. Coat a large skillet with cooking spray and heat over medium heat until hot.
  4. Add chicken breasts and cook for 5 minutes per side or until browned. Remove chicken from skillet and set aside.
  5. Add butter to the skillet and heat until melted. Add sliced mushrooms and minced shallots, stirring constantly. Saute until tender.

  7. Add remaining 3 tablespoons sherry and the reduced broth to the skillet. Bring to a boil.
  8. Cook until the sauce is reduced to 3/4 cup.
  9. Stir in the cornstarch mixture and cook, stirring constantly, until the sauce thickens.
  10. Return the chicken to the skillet, cover, reduce heat, and simmer for about 10 minutes.
  11. Transfer the chicken to a serving plate and top evenly with the mushroom mixture.
  12. Sprinkle with chopped fresh parsley before serving.
