Ingredients

  • 4 skinned and boned chicken breasts
  • flour
  • vegetable oil
  • 1 can beef consomme
  • 1/2 to 1 cup sour cream
  • black pepper
  • grated Parmesan cheese

Instructions

  1. Flour the chicken breasts and brown them in vegetable oil.
  2. Drain the fat from the pan, then add the beef consomme and simmer the chicken for 25 to 30 minutes.
  3. Add 1/2 to 1 cup of sour cream to create a creamy sauce, and add several shakes of black pepper.
  4. Transfer the chicken and sauce to a baking dish, sprinkle with grated Parmesan cheese, and brown under the broiler.
