Chicken Spaghetti Provincial
Ingredients
- chicken, deboned, boiled and cut into bite-size pieces ⓘ
- 4 c. canned crushed tomatoes ⓘ
- 1 Tbsp. chopped parsley ⓘ
- 1 large onion, quartered ⓘ
- 1 clove garlic, crushed ⓘ
- 1 Tbsp. Worcestershire ⓘ
- 2 tsp. salt ⓘ
- pinch of basil ⓘ
- pinch of thyme ⓘ
- 1 lb. canned or fresh mushrooms ⓘ
- butter ⓘ
- 2 Tbsp. flour ⓘ
- 1 c. light cream ⓘ
- 1/2 lb. Cheddar cheese, grated ⓘ
- 1/2 lb. spaghetti ⓘ
Instructions
- Simmer tomatoes and 2 cups chicken stock until liquid is reduced by half.
- Season with chopped parsley, onion, garlic, Worcestershire, salt, basil and thyme.
- Slice and saute fresh or canned mushrooms in butter until golden and drain.
