Ingredients

  • 1 cup enriched self-rising corn meal
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1 teaspoon dried basil
  • 2 cups cooked chicken
  • 4 egg whites
  • 3 cups milk
  • 1 tablespoon dried minced onion
  • 1/4 teaspoon pepper
  • 1/4 teaspoon tarragon
  • 4 egg yolks
  • chicken gravy (optional)

Instructions

  1. Measure the corn meal and set aside.
  2. Heat milk, butter, dried minced onion, salt, basil, pepper, and tarragon in a large saucepan until the butter melts.
  3. Gradually stir in the corn meal.
  4. Cook over medium heat until the mixture boils.
  5. Cook for one minute, stirring constantly.
  6. Remove from heat and cool slightly.
  7. Stir in cooked chicken and egg yolks until thoroughly combined.
  8. Beat egg whites until stiff but not dry.
  9. Gently fold the egg whites into the cornmeal mixture.
  10. Pour the mixture into a greased 2-quart casserole dish.
  11. Bake in a preheated 350°F oven for 45 to 50 minutes or until golden brown.
  12. Serve immediately, optionally topped with chicken gravy.
