Ingredients

  • 2 1/2 to 3 lb. chicken
  • 2 1/4 cups bread crumbs
  • 1 cup chopped onions
  • 1/2 cup coarsely chopped fresh tomatoes
  • 1/4 cup finely chopped onions
  • 1/4 cup chopped fresh coriander
  • 1 tablespoon chopped ginger
  • 1/2 teaspoon chopped garlic
  • 1 teaspoon garam masala
  • 1 teaspoon ground cumin
  • 1/8 teaspoon ground red pepper
  • 1 tablespoon salt
  • 1 whole egg

Instructions

  1. Skin, bone, and grind the chicken.
  2. Debone the chicken and discard all but the meat.
  3. Discard the wings.
  4. Chop the meat and grind if possible.
  5. Combine chicken, bread crumbs, chopped onions, chopped tomatoes, chopped coriander, ginger, garlic, garam masala, cumin, red pepper, salt, and egg in a deep bowl.
  6. Mix well in the bowl.
  7. Divide the mixture into 8 equal parts in a pan.
  8. Heat oil in a pan and deep fry the chicken mixture to form cutlets.
  9. Fry each side until brown.
