Ingredients

  • 4 Tbsp. butter
  • 1 onion, chopped
  • 8 cups chicken broth
  • 1 green pepper, chopped
  • 1 (10 oz.) package frozen sliced okra
  • pinch of cayenne
  • 1 (16 oz.) can stewed tomatoes, chopped
  • 1 cup cooked rice
  • 1 whole chicken breast, cooked and chopped
  • 1 can chicken gumbo soup

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add chopped onion and cook until limp, about 5 minutes.
  3. Add chicken broth, frozen sliced okra, cayenne, chopped tomatoes, and chopped green pepper.
  4. Simmer partially covered for about 1 hour.
  5. Add cooked rice, chopped cooked chicken breast, and chicken gumbo soup to the pot.
  6. Simmer for about 1 hour.
  7. Season with salt and pepper before serving.
