Ingredients

  • 5 Tbsp. butter, softened
  • 4 Tbsp. butter
  • 1 lb. raw shrimp
  • 1/2 c. onion
  • 1 c. bread crumbs
  • 1/4 c. finely chopped fresh parsley
  • 4 pieces sole or other fleshy fish
  • 1/2 c. celery
  • 1/2 c. water

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Spread 1 tablespoon of softened butter evenly over the bottom of a large pan.
  3. Shell the raw shrimp, then devein by making a shallow incision down their backs and removing the black vein.
  4. Drop the shrimp into lightly salted, boiling water and cook for 3 minutes until firm and pink.
  5. Drain the shrimp and chop coarsely, then place in a bowl.
  6. Chop the onion and celery finely.
  7. Combine the chopped shrimp, onion, celery, bread crumbs, and parsley in a bowl.
  8. Spread 1 tablespoon of butter over the fleshy fish pieces.
  9. Stuff the fish with the shrimp mixture.
  10. Place the stuffed fish in the prepared pan.
  11. Bake in the preheated oven for approximately 15 minutes or until the fish is cooked through.
