A hearty Italian-inspired chicken dish featuring tender quartered chicken cooked in a flavorful tomato and artichoke sauce, perfect for comforting family dinners with a touch of sophistication.

Ingredients

  • 3 lb. broil/fryer chicken, quartered
  • 1/2 c. olive oil
  • 1 c. artichoke hearts (optional)
  • 3/4 c. cooking sherry (optional)
  • 1 clove garlic, crushed
  • 1 (1 lb. 13 oz.) can whole tomatoes
  • 1/2 tsp. oregano
  • salt and pepper to taste

Instructions

  1. Brown chicken in olive oil.
  2. Drain and remove chicken to a warm platter.
  3. Saute crushed garlic in remaining oil until fragrant.
  4. Add canned whole tomatoes and simmer, stirring constantly for 5 minutes.
  5. Return chicken to the sauce, add artichoke hearts and oregano, then simmer, covered, for 25 minutes, turning chicken occasionally.
  6. Stir in cooking sherry and cook for an additional 5 minutes.
