Ingredients

  • 6 oz. corkscrew macaroni
  • 3 c. cooked chicken
  • 1/2 c. Italian dressing
  • 1/2 c. mayonnaise
  • 1 tsp. mustard
  • 3 tsp. lemon juice
  • 3/4 c. ripe olives, chopped
  • 1 onion, chopped
  • 1/2 c. green pepper, chopped
  • 1 c. celery, diced

Instructions

  1. Cook the corkscrew macaroni until al dente, then drain and set aside.
  2. Mix cooked and hot macaroni with cooked chicken and Italian dressing until well combined.
  3. Allow the mixture to cool completely.
  4. In a separate bowl, blend mayonnaise and lemon juice with mustard.
  5. Stir in chopped olives, chopped onion, chopped green pepper, and diced celery into the mayonnaise mixture.
  6. Add the mayonnaise mixture to the cooled macaroni and chicken mixture, and toss to coat evenly.
