Ingredients

  • 1 cut up chicken
  • 1 pkg. fresh or frozen cranberries
  • 1/3 c. flour
  • salt to taste
  • 3 Tbsp. olive oil
  • 1 Tbsp. butter
  • 1/2 c. sugar
  • 1/2 c. chopped onion
  • 1 tsp. grated orange peel
  • 3/4 c. orange juice
  • 1/4 tsp. cinnamon

Instructions

  1. Coat chicken pieces in flour, then brown in olive oil and butter. Set aside.
  2. In a saucepan, combine cranberries, sugar, chopped onion, orange peel, orange juice, and cinnamon. Bring to a boil.
  3. Pour the cranberry mixture over the browned chicken.
  4. Cook for 35 to 40 minutes until the chicken is cooked through and the sauce thickens slightly.
  5. Serve hot, with rice if desired.
