- Cut the chicken into serving pieces and coat with a mixture of flour, salt, and pepper.
- Drain the pineapple, reserving the juice.
- Heat butter in a heavy skillet and lightly brown the pineapple on both sides. Remove from skillet.
- Add oil to the skillet and cook onion slices until golden. Remove the onion.
- Brown the chicken in the same fat.
- Place the chicken and onion in a casserole dish.
- Measure the pineapple juice and add enough chicken bouillon to make 2 cups; pour over the chicken.
- Season with salt and pepper.
- Bake about 30 minutes at 350°F.
- 20 minutes before serving, add the defrosted peas and pineapple slices.
