Ingredients

  • 4 lb. roasting chicken
  • 1/2 cup flour
  • 1 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 14 1/2 oz. can sliced pineapple
  • 2 Tbsp. butter
  • 2 Tbsp. oil
  • 1 large onion
  • 10 oz. frozen peas
  • chicken bouillon

Instructions

  1. Cut the chicken into serving pieces and coat with a mixture of flour, salt, and pepper.
  2. Drain the pineapple, reserving the juice.
  3. Heat butter in a heavy skillet and lightly brown the pineapple on both sides. Remove from skillet.
  4. Add oil to the skillet and cook onion slices until golden. Remove the onion.
  5. Brown the chicken in the same fat.
  6. Place the chicken and onion in a casserole dish.
  7. Measure the pineapple juice and add enough chicken bouillon to make 2 cups; pour over the chicken.
  8. Season with salt and pepper.
  9. Bake about 30 minutes at 350°F.
  10. 20 minutes before serving, add the defrosted peas and pineapple slices.
