Ingredients

  • 1/2 lb. lean ground beef
  • 1/2 lb. pork sausage
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 2 cans (4 oz. each) whole green chiles, drained
  • 2 cups grated cheddar cheese, divided
  • 4 eggs
  • 1/4 cup flour
  • 1 1/2 cups milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon Tabasco sauce

Instructions

  1. In a large skillet, crumble together the ground beef, pork sausage, chopped onion, and minced garlic.
  2. Cook over medium heat, stirring until the meat is browned; drain excess fat.
  3. Line a 9-inch by 13-inch baking dish with half of the green chiles; sprinkle with 1 1/2 cups of grated cheddar cheese.
  4. Add the cooked meat mixture over the chiles and cheese.
  5. Top with the remaining green chiles and sprinkle with the remaining cheese.
  6. In a bowl, whisk together the eggs, flour, milk, salt, and Tabasco sauce until smooth.
  7. Pour the egg mixture evenly over the assembled layers in the baking dish.
  8. Bake in a preheated oven at 350°F (175°C) for approximately 40 minutes, until golden and set.
