Ingredients

  • 2 lb. ground beef
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 1 tsp. salt
  • 1 envelope chili seasoning mix
  • 1 (8 oz.) can tomato sauce
  • 1 (6 oz.) pkg. corn muffin mix
  • 1 c. evaporated milk
  • 1 c. shredded sharp Cheddar cheese

Instructions

  1. Brown ground beef in skillet, stirring until crumbly; drain.
  2. Add onion and pepper and cook for several minutes, stirring frequently.
  3. Stir in salt, seasoning mix, and tomato sauce.
  4. Spoon mixture into a 9 x 13-inch baking dish.
  5. Combine muffin mix and evaporated milk.
  6. Spread the muffin mixture evenly over the casserole.
  7. Top with shredded Cheddar cheese.
  8. Bake at 400° for 20 to 25 minutes, or until golden brown.
